So, what was his strategy? He was the Founder and CEO of “FISHBOWL,” a restaurant in Sydney and Melbourne that served Japanese-inspired salads and warm bowls. It was also one of the fastest-growing quick-service restaurants in Australia. Nathan, according to reports, co-founded the company in July 2016 with two others, Nic Pestalozzi and Casper Ettelson.
Bistro de CBD and Three Blue Ducks alum FISHBOWL’s head chef, Joel Bennett, created a menu inspired by the Mediterranean and Middle Eastern cuisines.
Nathan “bounced around a few degrees” at university before starting FISHBOWL. He was studying law, journalism, and commerce and couldn’t decide which way to steer the ship. Nathan discovered his calling for food and a healthy lifestyle after nine months of brainstorming with his classmates Nic and Casper. As a result, they opened a restaurant that now has over 15 locations in Sydney.
Nathan studied at The Scots College from 2001 to 2010.
